My current job will be ending on Monday, November 30. I understand the need to go to immigration and apply for a 7-day extension unless I plan to leave the country the same day.

I have two questions that I hope someone can answer.

1) Is there any requirement to show proof of onward travel at the time the application for the 7-day extension is made?

2) Does the 7-days start from the day the application is made? (In my situation, does that mean I would need to leave Thailand before midnight on Sunday, December 6th ?)

The wheels are already in motion with my new employer to obtain the M visa (I work in the media) and this can only be obtained from a consulate or embassy outside Thailand.

Thank you Lopburi3. Very much appreciated. If (1) does become an issue I will report back. I do plan to leave prior to midnight on that Sunday however I am not able to confirm a flight until I have one important document that's needed for the new visa application.

I am in a similar situation in that my current job is finishing, and I am going to be taking a new job.

I am currently on extension of visa, so I am guessing I need to leave the country on the date of expiry on my visa. I am not going to have enough time to organise a non-im B in time, and was thinking of what would be the best options that I can take. I will be starting the new job in 2 weeks, but there will be a slight gap in organising all of the correct paperwork.

Two questions really, can I get 7 days extension, or should I got to Laos and take a 60 day Tourist Visa?

I suspect you are in Udon? You permission to stay when on an extension of stay for work ends the day the work ends. If in Udon I would make the border run - if you believe paperwork will be available you can return for 15 days without visa but if in doubt spend the extra time in Vientiane to obtain a tourist visa. Am sure you know you can not work or obtain actual work permit (you can apply) on that but would provide stay until paperwork of B visa ready.

Thanks for that Lop, I think the border run looks the best option just to give me the extra time and less hassle whilst the new paperwork get's sorted out. On the Tourist visa what docs will I need to obtain? Sounds strange, but not had a tourist visa fro the last 4 years.

I have an additional question relating to my original post.

Is it possible to begin the application process for a Non-Imm B Visa and Work Permit from within Thailand whilst on a 7-day extension after leaving a previous job ? (I think the answer is no, however I'm seeking clarification from those better informed than me).

Yes you can start the process in extension of stay period. You will need WP3 receipt from Labour Department obtained when submitting your application for WP. Consulates within the region usually want to see WP3 receipt when you apply for your Non-B visa.
