I would go with the one metre spacing. In a building that size, the additional cost would be minimal.
3mm material is close to 1/8"- .125" so around 120 amp would be about what you would need.
Be sure to clean off any paint around welds before weldlng, and remove flux - prime - and paint welds afterward.

The problem is that much of the most productive land is being used to either raise animals for human consumption, raise crops to feed these animals, or for making bio-fuel, which is a net energy loss.

I do not wash in gasoline. Use dish soap and warm water, squeeze lots to get soap everywhere, rinse until clean and re-oil.
I use K and N when I can get it, but a light spray with WD40 on the outside only, with a gentle squeeze to cover all surfaces, if that is all there is.
